Papain, also known as papaya proteinase it’s a cysteine protease enzyme present in papaya. The papain precursor protein contains 345 amino acid residues. Papaine Powder contains endopeptidases, aminopeptidases, dipeptidyl peptidases and enzymes with both exo- and endo-peptidase activity. Papaya contains two of the most powerful plant proteolytic enzymes: papain and chymopapain. The enzyme papain can only be found in the papaya fruit and is superior to the pepsin produced by our own stomachs. Health Benefits of Papaine Powder
Papaine is obtained by cutting the skin of the unripe but almost mature papaya and then collecting and drying the latex which flows from the cuts. Latex adhering to the fruit should be carefully scraped off and transferred to the collecting box. However, dried latex should not be mixed with fresh latex as this lowers the quality. Papaine then dried by using spray dried technology.
