Salt is essential for life in general, and saltiness is one of the basic human tastes. Animal’s tissue contains larger quantities of salt than plant tissues do. Salt is one of the oldest and most ubiquitous food seasonings, and salting is an important method of food preservation.

Table salt or common salt is a mineral composed primarily of sodium chloride (NaCl), a chemical compound belonging to the larger class of salts; salt in its natural form as a crystalline mineral is known as rock salt or halite. Salt is present in vast quantities in seawater, where it is the main mineral constituent.

Salt is processed from salt mines, and by the evaporation of seawater (sea salt) and mineral-rich spring water in shallow pools. Its major industrial products are caustic soda and chlorine; salt is used in many industrial processes including the manufacture of polyvinyl chloride, plastics, paper pulp and many other products. Of the annual global production of around two hundred million tonnes of salt, only about 6% is used for human consumption. Other uses include water conditioning processes, de-icing highways, and agricultural use. Edible salt is sold in forms such as sea salt and table salt which usually contains an anti-caking agent and may be iodised to prevent iodine deficiency. As well as its use in cooking and at the table, salt is present in many processed foods.

Salt is mostly sodium chloride, the ionic compound with the formula NaCl, representing equal proportions of sodium and chlorine. Sea salt and freshly mined salt, also contain small amounts of trace elements. Mined salt is often refined in the production of table salt; it is dissolved in water, purified via precipitation of other minerals out of solution, and re-evaporated. During this same refining process it is often also iodized. Salt crystals are translucent and cubic in shape; they normally appear white but impurities may give them a blue or purple tinge. A spice is a seed, fruit, root, bark, or other plant substance primarily used for flavouring, colouring or preserving food. Spices are distinguished from herbs, which are the leaves, flowers, or stems from plants used for flavouring or as a garnish. Sometimes, spices may be ground into a powder for convenience. Many spices have antimicrobial properties. Spices are sometimes used in medicine, religious rituals, cosmetics or perfume production, or as a vegetable. A spice may be available in several forms: fresh, whole dried, or pre-ground dried. Generally, spices are dried. A whole dried spice has the longest shelf life, so it can be purchased and stored in larger amounts.

The flavour of a spice is derived in part from compounds (volatile oils) that oxidize or evaporate when exposed to air. Grinding a spice greatly increases its surface area and so increases the rates of oxidation and evaporation. Thus, flavour is maximized by storing a spice whole and grinding when needed. The shelf life of a whole dry spice is roughly two years; of a ground spice roughly six months. The “flavour life” of a ground spice can be much shorter.Ground spices are better stored away from light.

Some flavour elements in spices are soluble in water; many are soluble in oil or fat. As a general rule, the flavour from a spice take time to infuse into the food so spices are added early in preparation.

Spices those made from seeds contain high portions of fat, protein, and carbohydrate by weight.

Spices can also contribute a substantial amount of minerals, including iron, magnesium, calcium, and many others, to the diet.

Most herbs and spices have substantial antioxidant activity, owing primarily to phenolic compounds, especially flavonoids, which influence nutrition through many pathways, including affecting the absorption of other nutrients.

Spray Dried Powders

Spray drying is a method of producing a dry powder from a liquid or slurry by rapidly drying with a hot gas. This is the preferred method of drying of many thermally-sensitive materials such as foods and pharmaceuticals.

We use atomizer to disperse the liquid or slurry into a controlled drop size spray. Depending on the process needs, drop sizes from 10 to 500 µm can be achieved with the appropriate choices. The most common applications are in the 100 to 200 µm diameter range. The dry powder is often free-flowing.

Spray dryers can dry a product very quickly compared to other methods of drying.
They also turn a solution or slurry into a dried powder in a single step.
The application of the spray drying encapsulation technique is to prepare “dehydrated” powders of substances which do not have any water to dehydrate. Thermal degradation of products can be overcome by using lower operating temperatures and larger chamber sizes for increased residence times.

Spray drying, the choice dehydration method for the food and pharmaceutical industries, employs an atomizer and a stream of hot gas to produce dry powders, granules or agglomerates from a liquid or slurry. The atomizer disperses liquid feed into fine droplets from which the liquid evaporates, leaving behind solids. Products dried using this process include powdered milk, cake mix, instant coffee, detergent, dyestuff, ceramic powder and yeast extract.

Essential Oil

Essential oils are concentrated plant extracts that retain the natural smell and flavor, or “essence,” of their source.

Essential oils are compounds extracted from plants. The oils capture the plant’s scent and flavor, also called its “essence.”

Unique aromatic compounds give each essential oil its characteristic essence.

Essential oils are obtained through distillation.

Once the aromatic chemicals have been extracted, they are combined with a carrier oil to create a product that’s ready for use.

The way the oils are made is important, as essential oils obtained through chemical processes are not considered true essential oils.
